Stewed Meat with Potatoes
By: Victoria Christensen
Over the years, I've come to learn that most of the meals I love and crave, actually had some interesting beginnings.
When I spoke to my grandmother about this dish she told me that there were a lot of times when money was tight and foods like potatoes and rice really kept the family alive. She continued to say that potatoes, rice, and beans could make a meal stretch for days and by doing this, she could be sure that her family of five could eat three meals a day, seven days a week. This dish is quite popular in Mexico because of this reason but also because of its robust flavor.
Meat and potatoes are stewed with a garlic tomato based sauce, accompanied by fresh cilantro and onions. This dish may be considered a poor mans food but when it comes to Mexican food, flavor is never left out of the equation.

This meal has become one of my top five comfort foods because of the great memories I've had while eating it with my family and because it's one of those foods that can transport me home. Meals in my family are made with so much love that it even shows up in the little burn marks on my tortillas.
This recipe is simple to make and definitely low on cost but it is still so worth trying. I hope you come to love this dish just as much as my family and I do.
